We are looking for an inspiring Assistant Director of Food & Drink to join our leadership team and help shape the future of our award-winning Food & Beverage operation.

About the role
As Assistant Director of Food & Drink, you will work closely with the Director of Food & Beverage to lead one of the most prestigious luxury hospitality operations in Amsterdam. You will be responsible for delivering exceptional guest experiences across all Food & Beverage venues while developing a high-performing team that shares a passion for excellence.
This is a hands-on leadership role where operational excellence, people development, and genuine hospitality come together. You will lead by example, inspire your team on the floor, and continuously seek opportunities to elevate both the guest and colleague experience.

What you will be doing

• Support the strategic and operational leadership of the Food & Beverage department.

  
  

• Lead, coach, and develop venue managers, supervisors, and service teams, fostering a culture of collaboration, engagement, and continuous learning.

  
  

• Ensure exceptional service delivery and uphold the highest Waldorf Astoria standards across all Food & Beverage venues.

  
  

• Build meaningful relationships with guests, anticipating their needs and creating memorable dining experiences.

  
  

• Drive operational excellence through effective planning, scheduling, forecasting, and performance management.

  
  

• Monitor guest feedback and identify opportunities to continuously improve service quality and commercial performance.

  
  

• Collaborate closely with Culinary, Housekeeping, Engineering, Sales & Marketing, Front Office, and other departments to deliver a seamless luxury guest experience.

  
  

• Ensure compliance with Hilton brand standards, food safety regulations, health & safety requirements, and quality procedures.

  
  

• Support financial performance by managing labour costs, forecasts, and operational efficiencies.

  
  

About you
You are an experienced hospitality leader who thrives in a luxury environment and enjoys developing people as much as delivering exceptional guest experiences. You combine operational excellence with emotional intelligence and understand that outstanding service begins with an engaged team.
You bring:

• Proven leadership experience within luxury Food & Beverage operations.

  
  

• A strong understanding of restaurant and bar operations, guest experience, and luxury service standards.

  
  

• The ability to motivate, coach, and inspire teams to perform at their best.

  
  

• Excellent communication skills in English; Dutch or additional languages are an advantage.

  
  

• Outstanding interpersonal skills and the confidence to build strong relationships with guests, colleagues, and stakeholders.

  
  

• Strong organisational skills and the ability to perform under pressure in a dynamic environment.

  
  

• A keen eye for detail and an uncompromising commitment to quality.
